Happy St. Patrick's Day!

Whoops. Wrong month! But better late than never.

I saw this rainbow cupcake recipe from D.isney Family Fun and thought it'd be a fun project to do with Lily on St. Patty's.

It was and it wasn't. I had a blast doing this with my daughter and seeing how delighted she was. Other parts of it weren't as enjoyable. Please keep reading.

The batter had to be divided into six bowls for the six layers. And that was the easy part. Here are our little bowls of cupcake batter and the Mixing Queen.


And this is the part that was a royal pain in the neck. (Literally) Every layer had to be spread to the edges and smoothed. So that the finished cupcakes would have six distinct layers.

There were sixteen cupcakes and they each had six layers.

That's a lot of smoothing.

I'm just saying.
.
It's a good thing that St. Patty's Day only comes once each year because I need the rest of the year to recover from all the smoothing. Of all the layers.
But they turned out just precious. Don't you think? Lily was so thrilled and thought they were so cute.

They were even cuter after being frosted, but I forgot to get a picture after that step.
