Eggless Chocolate Cake

4 1/2 c. flour
3 c. sugar
1 c. cocoa
1 c. oil
3 c. water
3 tsp baking soda
1/2 tsp salt
3 T vanilla
.
Preheat oven to 350, grease 9 x 13 pan.
.
In a large bowl sift together flour, cocoa, soda and salt. Add sugar and mix.
.
Add oil, water and vanilla and mix thoroughly.
.
Pour into pan and bake 1 hour (30-35 minutes for 2 round pans).

I don't know if any of you have any need for an eggless cake recipe, but I made this one for Taylor's birthday and it turned out quite well. I was impressed.
.
I modifed it by putting in 2 cups of sugar rather than 3, adding a teaspoon of baking powder and a cup of chocolate chips. I'll definitely use this recipe again for Taylor's future celebrations and whathaveyou. =)
.
Have a great weekend!

Evan James

Okay, this'll be brief. I've been up past midnight 3 nights in a row and it's been a busy week and I'm totally pooped.

My dear friend Lisa had her third baby boy early Tuesday morning. His name is Evan James and he was 6 pounds 15 ounces and was 20 inches long. I drove to the cities today to meet him and it was such a treat! He's absolutely tiny and absolutely precious. Lisa and her hubby make good looking babies!

Here are a couple highlights!

Lisa's 3 sons
Kyle, Micah and Evan

Rub a dub dub
3 brothers in a bed
Whatever - I'm deliriously tired
Lily and her boys

She did an awesome job holding him!

I did an awesome job holding him too

My sister also did an awesome job holding the baby
.
That's all. Goodnight.

Illinois Recap #1

I've decided to tell you about our trip in several posts, because to do it all at once would take me awhile and there's a lot going on around here this week.

The first part of the trip started on a Wednesday evening when I drove to my parents' house in the cities and spent the night there. Taylor slept in the car on the way down there and then had a very tough time going back to sleep for the night. Ugh. He was also up at about 5:30 in the morning and it took me about an hour to get him back to sleep, but then he didn't wake up until 8:30!!! I was SO grateful for that bit of extra sleep to compensate for the night before!

We took off from my parents' house around 10 am in two cars - my dad in his car, and Lily, Taylor, my mom and myself in our car. We stopped in Eau Claire for lunch and my sister was able to meet us for awhile - it was great to see her! I wish she could have hopped in the car with us for the weekend!

After lunch the kids both fell asleep and so we put the pedal to the metal and tried to get as far as we could before they'd wake up, get antsy and need a stop.

The next couple hours included a stop for gas, more driving, a stop for supper, a stop at Walmart, a little more driving and then finally reaching our hotel near Peru, IL. What a day! We made it.

Taylor was spent so my mom put him to bed while Lily and I swam in the hotel pool. Fun!

The next morning she and I swam again and it was fun to see how her swimming lessons are paying off. She is so much more comfortable in the water than she used to be and I love it.

We got dressed, packed up, and headed to my grandma Adele's nursing home. My sweet grandmother has dimentia and didn't know us. But it was so important to see her. Taylor got to meet her for the first time and that meant a lot to me. She certainly brightened up around my children and was watching them with interest.

We were able to take some pictures and spend some time in her presence. She napped a little and didn't contribute to the conversation very much, and what she did add was for the most part hard to understand. We sang a couple songs to her and I didn't get through that without crying. Some of my most vivid memories with my grandma are of us spending time at their cabin in Eagle River, WI and hearing her sing as she worked around the house or prepared a meal in the kitchen.

We left for lunch and then came back to see her before heading up to Wisconsin to April's house (that'll be the next recap!!!). And then my favorite moment of the day happened. I brought Taylor close to her and she looked him right in the face. And she said, "Sweetie, Grandma loves you." My jaw dropped and it brought tears to my eyes. I was so excited that she knew that she is Grandma and that this baby is her family. I'm so thankful for that moment.

Lots of bummers, some larger than others

UPDATED: Stellan had a terrible night and is really not doing well. The situation is deathly serious. PLEASE PRAY!

There are times when I sort of feel like the bad news just keeps coming.

I'm going to tell you something at the risk of sounding crazy.

Jon and Kate splitting up has been sad for me.

There it is.

I watched the episode over a month ago when they announced that they were separating. And it made me feel sick to my stomach.

I've been watching their show from the beginning and have loved watching their family grow these past five years. I almost feel like I know them, in some strange way. And I was pulling for them!!!

So the fact that they're divorcing breaks my heart and I've thought about them and prayed for them quite a bit the last month or so.

And today we were told by our dear friends Neil and Lorelie that they are moving to California in a few weeks. And I'm sad.

They started attending our church a few years ago and we had the privilege of being in a small group with them a couple years ago and then again this past year.

They're both such wonderful people and have become such special friends. It totally sucks that they're leaving and we will miss them terribly.

The one "happy" side to this story is that their house (which they had been trying to sell for many months) sold last night! Neil interviewed in CA last week and the Lord sold their house within days of him accepting the job. What a blessing! And what a clear indicator from God that this move is His idea.

We had the opportunity to celebrate Easter with Neil, Lorelie and their precious little guy Will.
And then, if you've read my blog for very long, you know that I enjoy MckMama's blog. Her youngest son Stellan has a condition called SVT (he's had it since he was in utero) and he's been fighting it off and on for the past several months. He is currently in the hospital and isn't doing very well. He's been mostly in SVT for the past 48 hours and his heart cannot continue to keep up that rapid pace much longer.
.
Again, I almost feel like I know Stellan and his family since following them on Jennifer's blog. The situation with Stellan is quite serious, and I'd love it if you'd pray for him too.
.
When I read the updates about Stellan and see pictures of him in the hospital, I realize yet again how fortunate I am to have such healthy children. And I'm reminded how brief life is. And I want to run to my kids' room and cuddle with them, smoosh my nose into their cheeks, and smooch all my favorite smooching places.
.
Thank you, Jesus, for Lily and Taylor. Jesus, be near the McKinney family. Give the doctors wisdom. And please do a miracle for Stellan. Heal his heart. In Jesus' name, May it be so.

Precious Stellan

Happy Friday!

It's Friday! Mmmm, I love weekends.

My mom was visiting my grandma in Willmar yesterday and decided to drive here last night and stay with us! It's so fun to wake up with her in the house! She's always a breath of fresh air and it's so nice to have her here.

Two quick stories:

Last night for supper I gave Taylor some carrots and peas. They were a little hot, so I was blowing on them. He was watching me very intently. He picked up one little pea, brought it to his lips and blew on it! It was so cute!

Yesterday on the way home from swimming lessons Lily said she was hungry and asked if we could stop and pick up a donut! It made me laugh. i wish I had her metabolism, because she could probably eat a donut-a-day without it affecting her figure! We did not stop for a donut this time, but she clearly thinks it's worth a try to at least ask! =)

Have a great weekend!

Catching up

A lot of my posts from the past week or so have were written ahead of time and set to post automatically. So I'm feeling like we have a little catching up to do, because some big things have occurred the past few days.

This post could be all over the place so I've put it into categories. You're welcome.

A little about me:

First of all, I'M DONE NURSING. It's true. All done. I nursed Taylor for the last time on Monday morning, July 20 in Room 239 at the Holiday Inn Express in Vernon Hills, IL. The sad thing is that I didn't know that was my last time! If I'd known I would have tried to savor those precious minutes a little bit more.

We stopped for lunch that day at a Cracker Barrel in Wisconsin. And CB is known for their breakfasts.

Which contain eggs!

Which I've been avoiding like the plague because T is allergic.

But the temptation was too great and I ordered a french toast breakfast with eggs and bacon. And friends, it was simply scrumptious!

But I have SUCH MIXED EMOTIONS! I do miss it and part of me thinks the french toast breakfast wasn't worth it. The other part of me is elated! My body is my own again! I can eat or drink whatever I want without worrying how it will affect my baby. And that's so nice.

I also made it to his birthday! I nursed him for a year and I can't believe it. I'm *so* proud of myself.

The other thing about being done is that it feels like something is missing. I nursed him between 8 and 4 times a day every day for a year! It was very much a part of the routine around here for me, so it feels strange not to do it.

And one more thing. TIME TO BURN THE NURSING BRAS! Yuck! I despise those things and won't miss them a bit.

Okay. Moving on.

A little about T:

Tuesday was my 31st birthday. It was an interesting day, to say the least. There were some really wonderful things - like lunch with a good friend and a date with my hubby to see Harry Potter!

And then there was Taylor taking a tumble down the steps and breaking his leg.

I was in the kitchen with Lily and Taylor was in the living room playing. I had just been thinking, "I need to go make sure the gate is up" when I heard him tumble and start to cry. My heart was in my throat and I ran and scooped him up. He cried really hard and it took him awhile to calm down.

Typically when Taylor gets an owie he cries really briefly and then it's as if it never happened. But this wasn't like that. I rocked him before his nap shortly after he fell and he was wimpery. And he was definitely "favoring" his right leg, He cried out in pain when I gently squeezed his right ankle as I was checking both of his arms and legs to see if everything was where it was supposed to be.

Thankfully, his one year check up was already scheduled for the same afternoon, so this was the first thing I talked about with our doctor at the appointment. She said we better have some x-rays taken. Sure enough, he broke his leg. I was totally shocked. I just didn't think it would be broken. And I cried. I felt so bad. And to be honest, our doctor made it sound sort of serious and like surgery could be a possibility and like a cast was a definite.

They scheduled an appointment for us at the Orthopaedic Center the next morning. That appointment went very well. And no cast was necessary, much less surgery! The Ortho doctor believes that the break will remain stable and that Taylor will protect it/stay off of it allowing it to heal on its own. Yay!

It is amazing to see how in the first 24 hours he really adjusted to getting around by using that right foot as little as possible. What a smartie! =)

So, please pray that his little leg will heal quickly and that his pain will be minimal in the meantime.

The rest of his check up went well. He weighed in at 22 pounds 12 ounces. And he is 30 1/2 inches tall.

He is at that strange in-between place where he's outgrowing baby food and losing interest in it and is very interested in what's on our plates and wants to eat "people food". It's tricky for me because I have to put more thought into what I feed him now! I can't just grab a jar of baby food any more.

The "people foods" he's eating are yogurt, applesauce, peas, carrots, green beans, bananas, peaches, pears, cantelope, grapes, cottage cheese, toast, and pancakes (egg free). I'm sure I'm forgetting something, but you get the idea.

Before his little accident he was SO CLOSE to walking! He was taking lots of steps here and there and I just expected him to take off across the room any minute. So this is definitely a set back as far as walking is concerned, but hopefully he'll pick up where he left off when his leg is better.

He's just the most amazing baby. He's absolutely delightful and I love him so much. I thank God for him daily and I just feel so blessed to be his momma. He brings me so much joy and he's a little ray of sunshine in our family. Thank you, Jesus, for Taylor!

A little about Lily:

She is growing up before my eyes. I just can't believe she's 4 years old. She has a great sense of humor and can be hilarious. She catches on when she's being teased and can give it right back. =)
She's getting more independent with each passing day. She's started doing things like using the ice dispenser on the refrigerator to get her own glass of ice water! The first time she did it I watched with my mouth hanging open. She made it look easy.

Her preschool had a Summer Fun Day at the beginning of July. When I dropped her off that morning I got teary as I drove away. I just can't believe we're at this point - my baby is ready to start preschool. She's pretty excited and I think it will be good for her.

She loves her friends. I don't think a day goes by that she doesn't ask to have a friend over or go to a friend's house.

She's having a busy summer! Yesterday was the busiest day of all! She had her final session of t-ball in the morning, her swimming lesson in the afternoon and then soccer in the evening! She was absolutely exhausted and was asleep almost as soon as her head hit the pillow.

I just have to mention that she LOVES donuts! Every once in awhile we let her pick one out at the grocery store as a special treat. And then on our little trip she got to have a FEW little donuts and now she thinks this should be an every day occurrence! Today on our way home from swimming she asked if we could pick up a donut. It makes me laugh. This girl loves a good donut. =)

She's into writing thank you notes lately. We've had a lot of notes to write because of her birthday in June and then Taylor's birthday last week. So as we've worked on those cards she's wanted to write other thank you notes. It's the cutest thing - she sits at the kitchen table and writes her thank yous. And she means business. She wants to run them to the mailbox when she's done, so I have to make sure they have a stamp and an address before she sneaks out the door without me seeing!

She had her 4 year check up on Tuesday as well. She weighed in at 38 pounds 6 ounces and is 41 inches tall. Andy and I have always considered ourselves very blessed by how healthy Lily is - rarely ever anything worse than a cold - and we're so thankful for that!

She is keeping Andy and I on our toes and causing us to have many conversations about our parenting!!! We definitely have different styles of parenting and she has us figured out! So we have to work hard at being on the same page.

Even though she can be a stinker, she is our precious, priceless, lovable, silly, beautiful, smart and darling daughter. She, too, is a gift from God. I'm SO thankful for Lily and for the dynamic she adds to our family! It's a huge privilege to be her momma and I love her so much! Thank you, Jesus, for Lily!

A tiny tidbit about Andy:

One word: Basement

He's been working hard on the basement. He really wants to have it finished or as close to finished as possible before football season starts! While the kids and I were gone over the weekend he put the pedal to the metal on the plumbing. He bought the shower! How exciting! I'll have to post a picture once the shower is actually installed. Anywho, he's just doing such a great job. I'm very proud of him.

Softball season is winding down and they're in the playoffs right now. They won their game on Monday. Yay! I'll let you know how it all shakes out.

Andy is a wonderful husband and loves me so well. I'm continually amazed at how patient he is with me and how forgiving he is of me! He knows me and tries to understand me. He's a blessing. Thank you, Jesus, for Andy!

There. Now you're caught up! Please be praying for Taylor!

That's more like it

A nice summer day!!! Who knew?!?! I had to seize the day (literally) and take the kids to the park on one of our few beautiful days so far this summer. This is one of their favorite parks and they both have a great time there.

Beginning Rock Wall Climber!

Also loves to climb slides =)

She has *always* loved swinging! And she still prefers the "baby" swing because she can just sit back, relax, and let momma do all the work! =)

We got back from our little trip to Illinois on Monday evening. I'll tell you about it some time soon, but if you're friends with me on fb you can check out the pictures there. Hope you're having a great week!

July in Minnesota???

Lily had t-ball on Wednesday morning (the day we left for our little trip) and it was pretty chilly. Not a typical July day at all!!!

Here's T all bundled up and watching from the sidelines
Waving (in her jeans and jacket) to me from 1st base

In action! She crushed that ball!

Happy Summer!
(Isn't he adorable?)

Nails

I took Lily to the nail salon for a little mother/daughter date. I wasn't sure what to expect, but she did very well and sat perfectly still while her nails were painted. And then she waited pretty well for mine to be finished. It was fun! And I'd love to do that again with her.

We had a small mishap with a bottle of HOT pink polish. She dropped it on the tile floor and it smashed and splashed all over her jeans, and a little on my jeans and all over the floor. OOPS! She cried and felt so bad, but they people at the salon were really gracious about it. And she recovered nicely, don't you think? =)

Can you guess what color she chose???

BLUE of course!!! My girl loves the color blue.

Off to Illinois

Well, the birthday party recap will have to wait. I was hoping to get it done and posted before we left, but it isn't going to happen. You'll have to hang on a few more days!

I'm on my way to Illinois today with the kids. And my parents. Andy can't come along this time because of work. Bummer.

My cousin Emily is getting married on Sunday. We're going to stop and see my Grandma Adele first at her nursing home. And on Friday my babies and I will be staying with April and Dave!!! Saturday morning we'll head back to the Chicago area to hang out with the rellies (relatives) and then the wedding is Sunday afternoon. We'll make the big drive home on Monday. Should be loads of fun!

It's Taylor's first LOOOOOOOOOOOOONG car ride, so I have no idea how he'll handle it. If you'd pray that both of my kids travel well this weekend I would appreciate it!

This is Emily. Isn't she byoodeeful?
This was last summer when she was the maid of honor in her sister Erin's wedding.

This is a big 'ole group of Crabtrees. I'm looking forward to hanging out with these people.

And this is T at his b-day party. That big-almost-walking-boy thinks he's big stuff! I hope that tides you over until the birthday recap!
Have a great weekend!

Happy 1st Birthday, Taylor!

Today is my baby's first birthday. I can't believe it was already a year ago that he was born. Where has this year gone? It's been amazing getting to know Taylor and watch him change and develop over these twelve months. He is my little man and we have such a special bond. He's an incredible kid and I feel so blessed to be his momma.

Happy Birthday, Taylor! I love you as big as the sky!

Welcome to the world, Taylor Andrew!
It was PURE JOY to hold him in my arms!
