2 cups bran
1 cup low-fat buttermilk
4 T. canola oil
2 eggs
1/4 cup brown sugar
1/4 cup molasses
1 cup whole wheat flour
1 tsp. baking soda
1/4 tsp. salt
1 small carrot, grated
1 small apple, peeled and grated
1/2 small banana, mashed
1/2 cup currants OR raisins, optional
Preheat oven to 375. Spray a 12-cup nonstick muffin tin with cookin spray. In a large bowl, combine the bran, buttermilk, canola oil, eggs, sugar, and molasses. (I also sprinkle in some flax seed meal. You know me! I love flax seed meal!!!) Set aside and let stand for 20 minutes to soften the bran. In a separete bowl, mix together the flour, baking soda, and salt. Add the flour mixture to the bran mixture. Stir in the grated carrot, apple, banana, and currants. Do not overmix. The batter should be lumpy. Fill the muffin cups halfway and bake for 15 to 20 minutes, or until a toothpick inserted into the center comes out clean. Yummmmm!
